Now that we are well into summer we have an abundance of fresh, healthy herbs from the garden, farmer’s market and grocery store. This recipe calls for 3 different herbs and is packed with nutrients and flavor. The rainbow of veggies and herbs are rich in antioxidants and provide all the B vitamins, as well as vitamin C and K, beta carotene, calcium, copper, iron, manganese, potassium, selenium, zinc, and quercetin. The peanuts are heart healthy and may reduce the risk of cardiovascular disease. Enjoy this cool, zingy salad on a warm summer day!
Vegan Asian Slaw
1 cup bean sprouts
½ cup shredded carrots
½ cup shredded celery
¼ cup sliced green onions
2 T soy sauce or Bragg’s Amino Acids
3 T sesame oil
Minced fresh chili to taste
½ cup chopped mint, basil and cilantro
½ cup chopped peanuts
Toss together the bean sprouts, carrots, celery, green onions, soy sauce, sesame oil and chili. Top with the herbs and peanuts. Bon Appetit!
